Harder than I thought!! Breakfast was OK, but lunch out was HARD! I went to The Fresh Market planning to get a salad, but what did I find? Fresh, packaged salads that had labels 3 inches long! How is that possible?!?! Well, there were crasins with 10 ingredients, coated nuts with 6+ ingredients and they ALL had cheese with at least 4 ingredients!! And don’t even get me started on the salad dressings – at least 2 inches alone on the label. They did have 1 salad with no dressing, which was a start. I opted for a package of veggies ( squash, onion, asparagus, bell pepper, bok choy, ) and a roasted chicken breast that just had salt. But it was difficult even in such a “health” friendly store to find a food without a huge label that was ready to eat.
My break came in the afternoon. Given that I split the lunch above with my husband, I was starving by mid-afternoon. I didn’t plan well and ate 2 boxes of rasins I had at my desk. You would think they were just rasins, but no. They have several other “additives” to make the ready to eat.
On to day 2 – I’ve planned a little better and had a grocery store run since yesterday so here’s hoping it’s easier!
My meals yesterday:
Breakfast:
Hard boiled eggs & Sweet tea (yes another slip, but I’m not ready to give it up yet)
Lunch:
Stirfry veggies & chicken
Snack:
Almonds & rasins
Dinner:
Chicken & sautéed onions, Butterbeans
Day 1 went well for me. I kept it really simple as I usually only eat once per day 😉
Around 3 pm I cut up 3 avocado, two plum tomato and a lot of onion. Tossed it all in a bowl with juice from half a lime and a dash of salt. I devoured that all at about 6 pm….had to let the flavors marry!!!
