Here is a quick and easy complete meal!
Things you need:
- 1 can black beans or 2 1/2 cups cooked dry beans (make dry beans according to package directions; save the remainder for another meal!)
- 1 cup quinoa, cooked (cook according to package directions)
- 3 ears corn (or 1 large can)
- 1 large onion, chopped
- 1 lime
- 1 container of cherry or grape tomatoes
- 1/2 a bunch of cilantro
- 2 avocados
- Olive oil, salt and crushed garlic to taste
What to do:
- Cook or warm beans.
- Cook quinoa in separate boiler.
- In large skillet, saute onion and garlic, add corn after onions begin to brown. Continue to saute until desired tenderness.
- Combine beans, quinoa and saute mixture in large bowl.
- Add salt, lime and cilantro.
- If serving to a large crowd, mix in tomatoes and avocado.
- If not, add tomatoes and avocado to each plate, as served, to keep them from turning soft.
Enjoy a complete meal with protein and fiber from the quinoa, veggies from the corn, onions and tomatoes, fruit from the avocado and even your herbs and citrus with the lime and cilantro!
